I love a good, easy fish recipe with a nice creamy sauce. Cooking fish in the oven is the easiest way to get it consistently right.
The trick to cooking the fish really well here is making sure the parcel is airtight and nice and cosy.
This is a delicious easy dinner to make with minimal effort.

Ingredients
1 large piece of white fish
4-5 slices of lemon
4-5 sprigs of thyme
500g mushrooms
1 large zucchini
2 tablespoons of butter
1/4 cup white wine
1/2 cup cream
1/2 cup of finely grated parmesan cheese
Directions
- Pre-head oven to 180 degrees celcius. Place fish on a a large sheet of baking paper and place lemon slices and thyme sprigs on top
- Fold over the baking paper like you’re wrapping the fish up in a little parcel, twist the ends to close the parcel
- Put fish parcel into the oven for 25 minutes
- While the fish is cooking, start on the mushroom sauce. Chop the mushrooms & zucchini into cubes
- Melt the butter into a large frypan on medium heat and add the mushrooms and zucchini, sautee for 2-3 minutes
- Add white wine and cook for 2-3 minutes or until the wine is cooked out
- Reduce the heat slightly and add the cream, cook for another minute
- Take sauce off heat and add the cheese, stir through
- When the fish is finished cooking, remove from parcel and remove lemon & thyme. Place onto a plate and spoon over the mushroom sauce to serve. Sprinkle some extra grated cheese over the top if you love your cheese 🙂
