These gluten free buckwheat jaffa choc chip cookies are a delicious orange flavour in a classic choc chip cookie. The orange flavour is very subtle and elevates an ordinary choc chip cookie into something fabulous.
There is nothing better than the combination of orange and chocolate!
This recipe is a really easy one, the only problem is you can never have just one – a batch of these don’t last more than a day in our household!
I normally double the quantity below to make a big batch of these. They last for 3-4 days in an airtight container…not in my house though!
If you’re after a recipe for a classic choc chip cookie, gluten free of course, see our Gluten Free Buckwheat Choc Chip Cookies recipe.
What’s the deal with buckwheat?
Buckwheat’s health benefits are pretty amazing:
- Low GI
- High in protein
- High in minerals: copper, manganese, iron, phosphorus, magnesium
- High in antioxidants
- Good source of fibre
A note on coconut sugar – I try and use coconut sugar in most of my recipes if I need a dry sweetener – it’s by no means healthy, but better than white sugar. Coconut sugar doesn’t beat together with butter as well as normal sugar does, so give it a bit more time to combine together when you’re beating.
